Moroccan recipes from the countryside…

I must admit the only thing wrong with living in the countryside is there is no beach! One fun way to keep busy in the summer…try a new recipe. I love this one!

Moroccan Ratatouille with dates

4-5 tablespoons of oilve oil, 1 onion (halved lengthwise and sliced crosswise), 2 garlic cloves (chopped), 1 red bell pepper (halved lengthwise and sliced crosswise), 1 medium eggplant (halved lengthwise and sliced crosswise), 2 zucchini (sliced), 8 oz pitted dates (halved lengthwise), 2 14oz cans of chopped tomatoes, 1-2 teaspoons of sugar, 2 teaspoons of Ras-el-hanout, a bunch of fresh parsely, salt and pepper.

Heat oil in tagine or heavy casserole. Stir in onion and garlic and cook 2-3 minutes until they begin to soften. Add pepper eggplant and zucchini and cook further 34 minutes. Add the dates, tomatoes, sugar, and ras-el-hanout and mix thoroughly. Cover with lid and cook for about 40minutes until veggies are tender.

Season to taste with salt and pepper. Sprinkle chopped parsley over the top and serve the ratatouille hot.  Great with bread and as a summer side. Enjoy!
