A dear friend gave me a book about gratitude last month. It asks you to write down all the things you are thankful for each night. So for the past month before I go to sleep I journal my top 10…This month has been all about food!
Today’s recipe: Pancakes!….minus the Bisquick.
1C flour, 1T sugar, 1T cinnamon, 2t baking powder, 1/4 t salt, 1 beaten egg, 1 c milk, 2 T cooking oil.
In bowl stir together flour, sugar, cinnamon baking powder, and salt. In another bowl combine egg, milk, and cooking oil. Add to dry mixture. Stir together. Grease a heavy skillet. Pour about 1T of batter. Cook over medium heat about 2 minutes each side. Serve with chopped peaches, bananas, or berries and syrup for extra sweetness.
